View Full Version : Peanut/Almond Butter with Cracker, Triscuit, Melba Toast or other

As of a few days ago, I am back on PP plan. Over the past few years, I have enjoyed eating Triscuit crackers because they have decent fiber. Might not be great, but it's better than a regular cracker.

I guess ECC is carb minus fiber. So, that means each Triscuit is 2.8 gm carb. I note that a Melba toast is 1.8 gm carb.

I am searching for a cracker to put peanut butter on. Even better, almond butter. I guess almond butter is better for you. Although, WAY more expensive. I used to buy it by the case to get it cheaper but I have lost my source.

This is for between meal snack. Since I have not been up on PP for years, a lot has happened. Atkins products, there are many! So, maybe I could find a good low-carb cracker. Or do you think Melba toast is about as good as I could expect?

Also, if you have a comment about peanut butter / almond butter, fire away. What I like about a cracker and peanut butter or almond butter is it's filling. Although, my hunger pains are MUCH reduced now I am on PP again.

I also used to like to put cheddar cheese on a Triscuit. I wonder if there is a better cheese. Preferably, that will melt. I like them toasted so the cheese melts.

I like Kavli thin - about 7 ECC per 3 slices - but they are maybe 2"x6" --
but most days I use vegetables instead of grain based if i want something like that - celery, slice of cucumber, etc. WASA light rye are also a pretty good bargain if you only have 1 or 2 for a snack.

People here rave about Dr. Kracker - but I can't find them near me and haven't bothered for mail order.
If I want melty cheese, I make a quesadilla (or a half) using an lc tortilla rather than a cracker.

I've seen recipes for almond flour crackers - but haven't tried them. Randy likes to toast up yuba for chips - I haven't tried it though.

but that's me. Maybe others have better ideas for you.

I've made the almond crackers in the past. They're quite tasty, but can be a bit delicate and crumbly.

I make microwave flax bread - but I can't remember the ECC, and for me, it's never the same recipe twice.

I like Nut Thins--less than 1 ecc per cracker ( about the same size as a melba toast) and really crunchy plus have the advantage of being wheat and gluten free. and Yummy! I have to get them at the health food store or on line.

also a good carb bargain are the kashi brand crackers, I think the name is TLC? about 1 ecc per cracker ( they are on the small size though) and full of true whole grains and no trans fats ( truly none as per ingredient list --no soy oil either!) these are great with peanut butter. i do have to watch portion creep on these--very easy to eat too many.

I keep trying to make some really heathy/ really tasty/ really low carb crackers. so far results are only iffy. seems like you need the starch to get a really good crunch. and most of the low carb flour subs ( like carbolose for example) taste wonky to me. I keep trying though!
