Does anyone have any suggestions of a good brand of firm tofu?

Also, does anyone have any quick recipes with tofu? I've made tofu fries and I've eaten it cubed with pepper flakes and soy sauce. Other than that, I don't really know what to do with it. It's a great source of protein, and I want to eat more of it.

Padme, I actually use either the local supermarket chain's organic store brand extra firm tofu, or the extra firm tofu I can get freshly made at one of the Pan Asian groceries near where I work. I also have a box of Mori-Nu extra firm tofu in my freezer...sort of my emergency 'tofu' fund. ;)

If you can get extra firm tofu, one of the easiest things to do with it is to slice it, very thinly (using a wire cheese slicer to get the slices to 1/8 inch to 3/16 inch thin is the easiest), sprinkling it with either nut oil and cinnamon or olive oil and chile/garlic powders, and baking it until crispity in a 400 degree F. oven. Then you can eat it like chips whenever you want a snack.

You can also marinate it briefly in tamari and freshly shredded ginger, and bake it...

When I get in from the road, I'll try to look up more tofu recipes.

I prefer the Jimmy Dean version, but at times I can also deal with some others...
