I've done my shopping and have bought my sweetsfreeze, Poly D, Erythritol, etc. I also bought some Vanilla Whey Protein Powder. My husband and I have to make sure we get adequate protein too. Does anyone use powders in place of some flours/sweetners etc? If I do a search I get each post that has the word "protein" and the word "powder". Yes! I am computer stupid!!!:D

I use it alone with butter and sweetener for a very LC cookie but it is a hard firm snack, great for camping, poor for company. Adding coconut and egg, along with a bit of baking powder helps but is still not up to a "real" cookie.
One of the better ways to use it, is as a suppliment in other materials like cheesecake, LC pancake mix, etc..
Relief has a great Zucchinni muffin recipe that I use half almond flower and half Plain Whey Protein in that comes out terrific.
For baking I also find that I buy the 25 lb. or larger, bag of Plain Whey Protein since it is much cheaper and 0 ECC without the flavoring.
Another simplae way to use it is with freshly ground flaxseed and a bit of sweetener and cream. It comes out like Pablum, the baby food cereal and when warmed is a nice treat.

I think there's another discussion regarding this topic, as well, on this Board.

I tried baking with protein power, I attempted to bake sugar cookies. They were so bad, my dogs even refused to eat them. After that bad experience I'm not sure I would do it again.
