I am a type 2 diabetic and have had no luck in nfinding celery root here in Oklahoma city. Does anyone have a source to refer - possibly on internet.

Almost every grocer carries it, even way up North.:D

A potato it is not but it does have a niche in a LC arsenal of food choices. If you leave it sit too long (a few weeks) I find it goes a little sour much like a turnip when left it the fridge too long and it picks up just a hint of bitter.

Like Lisa says, just ask the produce manager.
Let us know how you do finding it.

Celery Root?

I live in an out-of-the-way place where it's hard to find a lot of things, celery root being one of them. If they have it at the local Food Lion, it's usually not very good. If I drive to the nearest city, I can find it at Whole Foods and sometimes at Target. I buy four or five at a time and get some pretty odd looks at the checkout!

Really. Try Roundup for the pesky stuff.

Then gitcherself a nice filet, and quit worrying about it.

No odd looks with filets, except from PETA folks. I always wear my Prairie Dog Shooter t-shirt when I drive into the city for steaks...

I don't know anything about celery root, but, following my grandmother's practice with turnips, I don't keep them in the fridge. We keep them (completely uncovered, not in a bag or any kind) in a cool, dry cabinet with the potatoes and onions and they seem to last "forever" - much longer than either the potatoes or the onions.

Thanks for the tip on storage. I don't get turnip or celery root often (a few times a year) but will store them as you suggest.

Another low carb vegetable in this category is Bamboo shoots (http://www.flickr.com/photos/joi/sets/287196/show/). You can get them canned or this time of year you can get them fresh and nutritionaly (http://nutrition.about.com/od/fruitsandvegetables/p/bambooshoots.htm) they are just 2 ECC/serving. Again you need access to an Asian market or pick them up canned.

Turnips are one of those vegetables :rolleyes: .
DH & I both love them and they make a nice change of pace from cauliflower. We have them maybe 10 times a year. My fav trick is to get DH to cut them :D .

Tried the frozen, but they were horrible...too "mushy"

I love to add celery root to vegetable beef soup because of the tremendous flavor it adds. I have only found it at super Walmart around where I live but only at certain times of the year too.

Dear Robert,

Also ask for celeriac. What do you need it for? Could you substitute parsnips flavored with some ground celery seed ?
