View Full Version : Paleo Chocolate Balls

How does this sound? I haven't done the math but it doesn't look bad.

1/2c almond meal (TJ's)
1/3c cocoa powder (TJ's)
1/4c coconut oil (cheaper to buy the flakes from a health food store).
3 drops of stevia extract (NOW)
2 packets of splenda
1/4 stick of butter
1/8c coconut milk
1/8c heavy creamer

Combine sugar and cream over medium heat. When hot add chocolate. Stir. Put in freezer for 10mins. Roll in balls. Back in freezer for 10mins. Enjoy!

well, Head Locker, it sounds fine...but 'Paleo Chocolate Balls' is a bit of a misnomer. You're using a lot of processed ingredients (extract of stevia, artificial sweeteners, cocoa powder rather than ground cocoa nibs, and some would include the dairy, too) which are not by even the broadest definitions 'paleo.'

But the recipe sounds good. ;)

Not my name for the recipe. I do like them. I hear women find them pretty bitter, but that men don't have that opinion as much. I have seen using agave nector(?) instead of stevia and splenda.
