View Full Version : In Need Of Gluten-free Coffee Snack

Any suggestions? I've been having a few (oven roasted) almonds and walnuts here of late drizzled with just a tiny bit of honey. It's great, but I need some variety (ELSE I'LL TURN INTO A NUT!). :D

Here's what I'd have...

Deviled eggs (my personal favorite)
Peanut butter on celery
Cottage cheese and berries (watch your ECC counts)
aged cheddar cheese and apple slices (not too many slices)

That's what I can think of off the top of my head. Good luck!

I picked up some pecans at the local farmer's market. They were "flavored" - the ingredient list was pecans, cinnamon, splenda and egg white. I haven't yet figured out how to make them (here's a recipe (http://www.cookingcache.com/lowcarb/sugaredpecanslowcarb.shtml)!), but they were really nice. They had a cinnamon bun taste - without the bun and icing.

I think they'd be a nice little snack with coffee.

The pecan recipe sounds yummy, but I guess I'm tired of eating just nuts. I can't have peanut butter because of the peanuts (a legume). Eating gluten-free and low carb (as I'm also a diabetic on no medication) can be hard sometimes! Talking about too many limitations!!! I wonder what I could do with Baker's chocolate....Anyone? :)

I'm trying to break my "have something as a treat with coffee" habit. On the occasion I still do it, I have a square of really good dark chocolate in the afternoon, at home, with really good coffee as well.

So what kind of really good chocolate and coffee? :) You know what? You may be right. I probably need to break the 2:00 coffee break. That could be the answer to the sweet tooth attack. Too bad, though. :(

I have chicken breast & some nuts most afternoons at work - not sweet - and takes the edge off so that by the time I get home I don't mindlessly eat until dinner. And I deliberately have the snack with hot water or coffee or tea as I'm trying to kick the "soda at work/drink sweet when eating" habit as well.

Many here like the Lindt 85% or Lindt 70% chocolate - I've found some niche brands at my local grocery that I like better - can't remember the names though - even Hershey's is coming out with some varietal dark chocolates that are pretty good.

pick something you like and then figure out your plan-appropriate serving size. Let's say your bar is a 60% dark that the label says 3 squares for 19g CHO with 4g fiber for 15 ECC per 3 squares. 1 square then is 5 ECC and could fit as a snack. Another higher %cacao bar might end up 3 ECC per square - and you might choose to have 2. Or you might find that the darker bar is higher quality or richer and you are more than satisfied with just 1 square. That's a keeper.

Lulu, I know you said you're tired of nuts, but I stretch my Lindt with about four almonds per square. A nice combo.

I'm going to try the cinnamon nuts for entertaining. Maybe for potlucks.

Actually, I don't usually have a 'snack' with coffee...really good coffee, with whipped cream when I'm feeling indulgent or as a cafe au lait with cinnamon most days, IS the snack. I don't need to eat anything with that--just sip my coffee and meditate for a few minutes and/or walk for a few minutes. I do need a break about mid-afternoon, especially on a 14-hour workday, but enjoying a fine cup of coffee or tea, to me, is just as relaxing as actually eating something WITH the beverage of choice.

And when it's really hot, I have an iced coffee. ;)

can you eat flax meal? what about whey powder. ( I just don't know what is gluten free) there are some seriouly good muffin recipes out there ( starting with Gaelen's nut muffins which are posted in the recipe) which could be made gluten free pretty easily I think. I have a muffin nearly everyday. blueberry or raspberry. gingerbread, chocolate, lemon--anyflavor you can think of . and they are really yummy. I'll post my own recipes as well--haven't done so as yet.
