I need something to eat with cheese or peanut / almond butter or summer sausage. I use celery stalks with peanut / almond butter some but that gets old. I have been using Triscuit but it's not so "healthy" plus, it's 2.7 ECC each. Wondering if anyone has found anything you could buy in a box that's low carb. Hmmm... I just remembered Melba toast. I wonder if that would be a decent choice. Even better if they made a low carb one.

there have been some good ones mentioned here, Gaelen likes Mr Cracker (or something like that)
if I have to have a cracker, in my grocery I easily find Kavli Thin - 11 ECC for 3 pieces - http://www.amazon.com/Kavli-Thin-Crispbread-5-29-Ounce-Boxes/dp/B000FBM4FI/ref=tag_tdp_dp/002-7900939-9228062

WASA Light Rye is also good at 11 ECC for 2 pieces. http://us.wasa.com/wasa/smpage.fwx?page=595&PRODUCTUS=1140&main=products

DH loves the Kavli brand crackers/crispbreads.

He also recently tried Finn Crisp. Their ECC is lower - 7 for 2 slices, but they weigh 13 grams for 2 slices, compared to Kavli 18 g for 2 slices.

I like the Finn Crisp taste better.

Hmmm... maybe Triscuit is the right choice anyway? It's...

each Triscuit
2.7 ECC
20 cal
no trans fat
30 mg sodium

Ingredients: whole wheat, soybean oil, salt, monoglycerides.

I like to eat healthy things but I'm not a health food purist. Any baddies in those ingredients?

if you stop at 3 triskets I suppose that is fine. not crazy about soybean oil but they aren't very big so there probably isn't much.

you know the crackers we were referring to (finn crisp, wasa, kavli) are the size of 3x5 cards not the size of Triskets, right?

No, I didn't know that. That's better! Bigger, yeah!

I don't know about the others, but from memory the ingredients for Finn Crisp are rye, salt (maybe yeast?), and that's it. If you don't mind making them yourself, Gaelen's posted a recipe for almond crackers (ground almonds, egg white, whatever flavourings you choose) that are pretty good, too - they're in the recipe section of the board.

Dr. Kracker has great offerings:

Pumpkin Seed Cheese is my favorite flavor. When I bake or broil fish, I grind up 1/2 cracker with some parmesan and sprinkle on top. Delish!

I agree with Kathy. Dr. Kracker is great. I, too, like the pumpkin seed/cheese. They are great with a slice of your favorite cheese or deli meat tucked between them.

I like nut thins. Here is a link to their nutritional values: http://www.bluediamond.com/retail/nutthins/Nut%20Thins%20Nutrition%20info_Layout%201.pdf

I have tried the hazelnut and pecan. I like them both. 16 crackers equals a serving at 1.38 ecc per cracker or 22 carbs for the entire 16.

Lots of flavor.
