View Full Version : Easy one slice flax seed bread

This is a recipe for one slice of flax bread.
4 Tbs. flax meal (ground flax seed - can also be made with 3 Tbls.)
1/4 tsp. baking powder
1 egg
1 packet Splenda or 1 tsp. sugar-free syrup such as Torani
Mix all ingredients together and pour into a square (sandwich) container. Microwave on high for 2 minutes. All done!
Put butter or other toppings on it and enjoy!

This is the old lc standard the OneMinuteMuffin recipe. I use 1/2 tsp baking powder and no Splenda to save carbs and use all sf syrup and nuke in an oversize coffee cup for about 1 minute. The top should still be a little shiny and not look too dry-if it is too dry shorten nuke time. Immediately turn the muffin out of cup a and clean-the flax will harden in the cup. I sometimes add cocoa powder for a chocolate OneMinuteMuffin or pumpkin pie spice or cinnamon. ;)

Being unable to eat grains, I love this bread!!!! It makes great muffins too.

it's also good with a few frozen berries in the mix.
i have unflavored protein & some powdered flavors/sweeteners for when I make shakes.
I've made the muffin with the banana flavor/sweetener and it was great.

OOOOhhhhh! These ideas sound wonderful, I will have to try them. I have also made some french toast out of this (doesn't work as well as the pork rind french toast but is pretty good).
