View Full Version : No bake cheesecake?

I would like to come up with a recipe for no-bake chiffon-style cheesecake. (DH prefers it to baked.)

I found this recipe online that I think might be easily adapted:

1 (8 ounces) package Cream Cheese 1 container Cool Whip
1 cup powdered Sugar
2 tablespoons Vanilla Extract
2 tablespoons Lemon Juice

If I substitute 1 cup whipping cream whipped and folded in for the cool whip, I think it might work. I also think the sweetener amount (using Splenda instead) seems a little high, I might start with half that.

I made a jello-based recipe a few years ago with sugar free lime gelatin and cream cheese, but it set so hard it was bouncy and rubbery. Plus, I'd like plain cheesecake. :)

If anyone else has an existing sugar-free, low-carb recipe please share!

They're a bit on the foodie side, but Delia Smith's recipes -- particularly the ricotta cheesecakes -- seem like they may be adapted to suit without too much difficulty.

Sadly, I've so far only tried her curd cheesecake with greek yogurt (in it's original not very low-carb form - the honey on top really pulls it together), so I can't offer a tested lower-carb version of any of these. But give me some time...

(Note that "curd cheese" isn't creamed cottage cheese, but a drier cheese, ricotta-like in texture, but not made from whey, something you can readily make yourself or substitute with ricotta, perhaps mixed with a bit of mascarpone. And "biscuits" are, of course, cookies.)

I tried the recipe listed in the first post except I substituted a package of Splenda (the kind meant to be mixed with Kool Aid = 1 cup) and whipped a cup of cream. It turned out more like a mousse than pie consistency, but was VERY good. If I make it again, I'll probably add a bit of SF pudding powder to the mixture to help firm it up. Adding 1/4 package will mean 8 ECC extra in the whole recipe, but should make it a bit more cheesecake like. Another option would be to use Not Sugar or Not Starch, but I don't have any in stock right now.

I have just joined, so am coming to this thread a little late.

There is a UK Splenda site (most definitely not low carb though) and there is one there. I don't know if you have crème fraiche, but presumably you have something similar?

You would of course have to change the crust.
