i was just playing around the kitchen today and something very deliciouse came out:

fry some butter with bacon (i used 100 gr. pancetta cubes), 1/2 red onion, couple of sundried tomatoes, small pieces of pumpking with fresh grounded pepper and fresh italien parsley

mix eggs with 1 spoon of avocado oil, nutmeg, paprika, salt and pepper

ad chillioil or oliveoil in pan and fry eggs in it

mix everything together, add 2 tsp. sundried tomatoe pesto and 1 tsp lard for the extra kick ;)

I usually just fry onion on olive oil, than add scrambled eggs and this is it. Delicious :)

SandyO, did you put together a carb count for that?
You have 2 eggs, for 2g carbs (which some people don't count...)
1/2 red onion, (assuming medium size), 4g net carbs.
Sun Dried tomatoes, which rock about 1g per piece, or 13 g per ounce.
undetermined amount of pumpkin, which, taken raw and fresh, is 2g/oz.
2tsp of SDT Pesto, which is another gram.

My rough count calls this, uhm, 2+4+7+1+1 (assuming half ounce of pumpkin and half ounce of SDTs), for 15g. Scales up very quickly with more SDT.
Nice for maintenance, not really appropriate for a loss level of blood sugar regulation.
