Good morning! How did your weekend go? What were your challenges?

Mine was making cheese potatoes for a party. I had about 3/4 cup, so I'm satisfied with that. It might be time to make that great cheesy cauliflower casserole that actually tastes even better when you add sausage to it.

I still have some shopping to do, and I might have to go to THE MALL to do it. :p Not my favorite scene this time of year!

Breakfast was a protein shake, lunch will be a lc cheese wrap, dinner will be pot roast with carrots and green peppers.

Enough about me! What about you? ;)

Monday 12/21/09

Hi everybody.

I guess if I had any challenges it would be staying in focus while experiencing aome nasty nerve pain. At one point in my life I would have eaten. But those days are over. I've found out the hard way...FOOD DOESN'T HELP!

Up bright and early this morning. Actually I didn't get much sleep. I had some problems with pain.

I'm sitting in front of the county court house. I took a friend to court for his second trip over a DUI accident. I hope he learned a lesson. Drinking and driving don't mix. Remember that my friends over this festive season.

No exercise today, it hurts to much to even move.

Here's my food plan for the day.

Breakfast- 2 whole eggs, 4 whites, 3 Esskay turkey bacon, 70gms blackberries, 2c green tea
43gms protein, 11gms carbs.

Lunch- 5oz grilled burger, 1oz cheddar cheese, freezer slaw, 2c green tea.
42gms protein, 6gms carbs.

Supper- 6oz Cajun spiced orange-roughy fillet; tomato basil salad (1 med(5.2oz) tomato, 1/8c chopped onion, 4 thinly sliced basil leaves) dressed w/evoo & taragon vinegar; 1/2 med grilled peach, 2c green tea
40gms protein, 8gms carbs.

Carol, good for you, 3/4 cup of spuds is great control. Ugh, malls at this time of year......
Bill, hope you get to feeling better. Pain can really interupt sleep.

I had a busy weekend, mostly on track, however, found some pickles (hot dill) that I used to love and bought some. The scale says up two lbs, but I know it was them;) Still, I am glad to have found them, will just have to limit.

Today, I am in a very busy clinic, but only three more days to go untill the big day.

Menu:
B- eggs, ham, coffee, hood milk
L-homemade beef stroginoff made w/ dreamfield's pasta, brocoli, leftover corn, ~ 1/3 cup
S-few Chilean raw cherries
D-planned: steamed shrimp w/ lc white sauce over dreamfields, (cooked too much last night for stroginoff), tossed green salad.

I survived the weekend on plan...it's been awhile since I've been able to do that!
I did do some lc baking. Buttered pecans and "sweet nutty balls". I'm not sure the balls worked out. They were not "ball-like". The receipe said to "roll them in a ball" but mine were so sticky there was no "ball-making" to be had.
Takes pretty good. The ingredients are almonds, cream cheese, heavy cream and splenda. Very simple.
I'm freezing them to see if they turn into a cheesecake ball or something like that. Otherwise they're like slightly melted marshmellow texture. Weird.
But good. and 1 ecc per ball according to the recipe.

There is a terrible storm coming on Wed and THurs this week (Carol, I hear you're getting 4inches of freezing rain?!!). I took all of Thursday and half of Wednesday off so I can travel to Iowa to be with my family. I hate driving in terrible weather, and the drive between Iowa and MN gets hit often, so we'll see how it goes. I am not opposed to stopping at a hotel for a night or two even though it's only a 3.5hr drive.

7am brat wrap, 2hb eggs
11am cuke, lc lasagna or goulash (whichever I grab)
2pm 2oz cheese, clemetine
6pm turkey taco on lettuce with cheese and s cream and salsa

I go to the doctor today for my annual physical. I planned on getting my cholesterol checked, but I've been so far off plan I'm nervous about it.
Also, on Thursday these weird bumps appeared on the side of my neck. They were very sensitive and burned/hurt when anything touched them. Last night they blistered. They are less sensitive today, but now I have some bumps UNDER my skin. They're all pretty small, about 1/2 the size of a pencil eraser, and I have maybe 6-8 bumps. We've decided it's a heat rash of sorts. It started right after I wore a turtleneck sweater.
Very weird, so I'm glad I'm going to my physical today.

Remained on plan over the weekend, despite going to Disneyland on Saturday. It was packed; by 2 pm they had closed the parks to new arrivals (to go between them you had to have a hand stamp as well as your ticket). Beef jerky and nuts held me over from lunchtime until we left around 9:30.

This morning I'm "working from home" or "on vacation", depending on the situation. So I'm tethered to my laptop and cell phone, burning a vacation day.

Breakfast was three almond meal pancakes and four strips of bacon (yum). Doing the windows is on the agenda; our rains are past and we are hosting Christmas this year, and we thought it might be nice if our guests can see out the windows.

Today will be some house cleaning for me and perhaps venture out in the pouring rain to get my last (ok, only) Christmas present bought. We do a "white elephant" gift exchange at the family dinner, that's all I buy for. I just looked out the window and its not pouring rain now, its snowing. :rolleyes: It probably won't stay, its too warm. We have to drive a 3 hour round trip to go to DH's grandmothers memorial dinner thing, so I hope the snow doesn't stay.

I've been a bit piggy lately so have to get myself back in check. I don't know what will be available for dinner so I'll keep the carbs really low through B & L.

Slipped a bit over the weekend but on track for today.

Everything wrapped, guest beds made, and will clear a load of stuff that we realized we will never use tonight. We did a full load on Saturday and it feels great to be working towards having less clutter.

Probably the salt, which you can "drink away".

Oh, I dearly hope it's not that much! :eek: I did definitely hear freezing rain, though. I feel sorry for my SIL who will be driving up from Quincy right in the middle of that storm system.

That is SO not fair! :jawDrop: I thought "white elephant" was something you pulled out of the cupboard that you don't ever use. You don't even have to go out!
...it feels great to be working towards having less clutter. That is the truth, Randy. It's stressful to have clutter. We're all collectors in my house. :rolleyes:

Well usually it would be but with it being a smallish group that has been doing this for a few years things can only get passed around so many times. :nod: It's good to throw something new in the mix. I didn't get it bought anyway, I didn't even finish cleaning the house before it was time to head out of town.
