another busy day although my "list" of to-dos from the auditors is definitely getting smaller!
Meals are planned...GF offered to make my supper since I am so dern busy! Thank you GF!!!

8am brat wrap, 3hb eggs
11:30am burger (no bun), mixed greens (free lunch from work)
5pm pork chop, cheesey cauliflower casserole
8pm (if hungry), salami and cheese

I won't have to time officially "exercise" so I took the stairs today and am volunteering at the cat shelter tonight - which usually ends up being WORK!

Good morning,
How bout this global warming BS ?? Is anyone out there warm?? How bout in Tampa? DW and I are heading down that way in a month- looks like fresh produce may be at a premium.
Yesterday ECC= 32 Protein= 148
The ecc's are coming in mostly at lunch- got to smooth them out - try Bill's 10 per meal (sure is working for Bill).
Today B= shake and bacon with egg- ecc=7 protein a whopping 68
L= hamburger patty? with salad
D= whatever with 10 ecc's and <40 protein

Creamed Spinach!


What a yummy creamy comfort food...MMmmmm.
I searched the forum for a recipe, and there is a note that a recipe is listed that is linked to recipezaar, so there is the link and recipe!

Ingredients
White Sauce


3 tablespoons butter (http://www.recipezaar.com/library/butter-141)
4 tablespoons flour (http://www.recipezaar.com/library/flour-64)
1/2 teaspoon salt (http://www.recipezaar.com/library/salt-359) (I use seasoned salt)
1 cup half-and-half (http://www.recipezaar.com/library/half-and-half-445) or milk (http://www.recipezaar.com/library/milk-360)
Spinach


1/2 cup sour cream (http://www.recipezaar.com/library/sour-cream-147) (lowfat is okay)
2 tablespoons butter (http://www.recipezaar.com/library/butter-141)
2-4 tablespoons onions (http://www.recipezaar.com/library/onion-148), minced
1/4 cup water (http://www.recipezaar.com/library/water-459)
20 ounces frozen spinach (http://www.recipezaar.com/library/spinach-301), drained and chopped
1/2 teaspoon ground black pepper (http://www.recipezaar.com/library/pepper-337) (optional or to taste)
1/4 cup grated parmesan cheese (http://www.recipezaar.com/library/parmesan-cheese-467) (optional)
Directions


In a saucepan melt butter over medium heat until sizzling.

If you are adding in the fresh garlic and a pinch of cayenne pepper then saute in butter for about 2 minutes but do not brown the garlic.

Whisk in the flour and 1/2 tsp seasoned salt (or white salt) until creamed together and smooth.

Stir in the half and half, or milk (if using) a little at a time.

Increase heat to medium and constantly whisk until the mixture becomes thick and smooth.

Remove from heat; set aside.

Place 2 tbsp butter in saucepan over med heat; add the 2 tbsp minced onion, and cook until transparent.

Add spinach and water to pan, lower the heat, and cover.

Stirring several times until the spinach is cooked.

When the spinach is almost done, add the prepared white sauce, sour cream and Parmesan cheese (if using).

Stir well, and simmer until completely blended.

Season with more seasoned salt or white salt if desired and black pepper.

Today, I have discovered I can drive in ice on roads poorly sanded. When it ices or snows here in North Texas, we are ill prepared :eek: Not to mention the crazy drivers!

Here finally, ready for a busy clinic.

Menu: B-shake whey in hood milk, coffee, L-homemade pimento cheese on LC bread, sf ocean spray cranberry juice, S-almonds, D-? grilled something with green veggie, green salad., maybe Ammy's creamed spinach!

Well, I'm slowly waking up from a better night's sleep last night. I want to try to sleep in bed tonight; after all these weeks in a recliner, I'm having difficulty adapting back to normalcy.

My food plan for today: cottage cheese and sausage links for breakfast, coconut muffin midmorning, FlatOut pizza for lunch, pork and sauerkraut for supper. It's all going well so far, AND I have my "Sit and Be Fit" video, so I plan to exercise in a bit.

I have papers to grade and lesson plans to write, so it won't be a slow day today. Makes me wonder how I'll handle my normal schedule, when I'd be doing all of the above and teaching five classes (plus working at the college in the evening!!)

Claudette, is it possible that Texas drivers could be worse than Pennsylvania drivers? Somehow I doubt it!

Amy, I'm not so much of a spinach fan, but you've got me thinking about making cream of broccoli soup!

Well....I survived lunch which was brought in. I ordered a cheeseburger with a side salad, and was able to IGNORE the bun! Threw it RIGHT out!

However.....someone brought in a carrot cake....a yummy scruptious looking carrot cake...........

So I'm here telling you all that I am NOT going to eat any cake. I'm just NOT going to do it. I'm not going to be around when it's served, I'm not going to smell it when people have it at their desks...I'm going to shut my door and ignore it all!

Way to go Amms !!! NEAN it kid, NEAN it ! It is poison really !!! Think poison . Think Carbage is poison. Repeat after me ......

It is sooooo cold here and very windy to boot so it makes you stay indoors if you can (and I can) I am going to get cabin fever but that is better than frozen tootsies !

Eating is on plan but no exercise as of yet...it will be the elliptical when I get around to it.

Afternoon all!

Congrats to all the losers.

I had my weekly stretch and massage this morning. PT wants me to wait on the exercise. She wants my doctor to order some tests. Seems that there some sort of reaction delay and she wants to know what's going on. She said this could be the reason I have such a bad balance problem.

Breakfast- 2 whole eggs, 4 whites, 2 Esskay's turkey bacon, 70gms blackberries, 2c green tea.
40gms protein, 8gms carbs.

Lunch- 2 roast beef rollups; 4ozs deli roast beef, 2ozs deli swiss cheese, 2 red leaf lettuce leafs, 1T chipotle mayonnaise, 1 med peach(3-1/2ozs), 2c green tea
42gms protein, 9gms carbs.

Supper- 5oz grilled burger; 1oz cheddar cheese; tomato, onion & basil salad, (1 med(5.2ozs) tomato, 1/4c onion, 1T fresh chopped basil); olive oil & taragon vinegar dressing, 2c green tea
42gms protein, 8gms carbs.

spoke too soon! Found a bit of cake still sitting there...and most people are gone, so I had to put it away.
But I didn't eat any...didn't even lick my fingers!!

I can see those pounds dropping to the floor as we speak. Hang in there. Kid.

Utterly boring day except for when my dd and dgd and dgsil came over to visit for a while. I'm surprised dd got out in this cold--she hates it worse than I do.
