With all the summer outside activities people have, many times they are associated with, 'Grandma's homemade potato salad, or Aunt Betty's Apple Pie", any menu's we can host here for summer activites that will replace the carb laden ones but won't dull the party for you?

Billie, two of the 'sides' I made a couple times last summer, and that passed the family test, were Curried Red Cabbage Slaw (can be served either hot or cold, and no mayo so it can handle a hot day) and Roasted Cauliflower Salad. If I'm remembering my recipes correctly, the red cabbage makes 8 one-cup servings, and each one is aobut 9g ECC. The roasted cauliflower salad is closer to 11g ECC, and has a mustard-dill dressing that can also stand up to a hot day without wilting. I'll try to get out the recipes in the next couple of days...

Edited in on 6/20/2006: Here is the Curried Red Cabbage Slaw in the Side-Dish Salad (http://www.proteinpower.com/forum/showthread.php?t=26) thread...it's a great accompaniment to grilled brats, or italian sausages. There are also some great recipes in that thread for cauliflower salad, jello salad, etc. that would be the perfect additions to a picnic menu. I'll try to get my roasted cauliflower salad up to the boards today or tomorrow.

I made some baked beans for tomorrow that turned out fab and I though I would share. I owe a lot to the barbecued baked beans recipe in " The New Best Recipe" cookbook form Cook's Illustrated. But the recipe is thoroughly modified so I can call it my own. ( incredible book BTW not low carb, but outstanding information about how and why ingredients do what they do!)

3 cans black SOY beans ( 1 Ecc per can)
4 slices bacon, diced
1/2 medium onion chopped fine ( I used a food processor for this)
1 tsp garlic powder
1/2 cup stong black coffee
1 tablespoon molasses
1/4 cup splenda or equivalent ( I used 6 drops of sweetzfree)
1 tablespoon spicy brown mustard
1/2 cup low carb barbecue sauce--I used carb options brand which I bought a lot of before they discontinued it.

brown the bacon then add the onion and cook til translucent. ( I do this right in the dutch oven on the top of the stove) add the beans and then stir in the rest of the ingredients. let it come to a boil on the stove top, then cover and put into a 300º F oven for 2-3 hours. stir it every hour or so. super yummy.

carb counts for the recipe: 25 ECC --per serving would depend on the size of the serving-- for 6 servings it would be about 4 ECC per serving.

It made my mouth water, truly. The combintation of the flavors in this have to be astounding. Our menu is fixed for today but what a treasure for a weekend picnic!

This sounds very, very good. I love baked beans, but not all the carbs! This sounds very low carb!!

they really were delicious! I enjoyed the leftovers for a couple of days and was so disappointed when they were gone! I'm gonna make up another batch this week! This time I'm going to tweak it and use some subs for the BBQ sauce since I wont always have store bought available. I'll post those ( if they work :D )

Gonna try to make Carol's bars again today with a few tweaks here and there. the last batch was mediocre and went to mold within a week cause the dummy did not refrigerate them.
The reason to use this thread is because by this summer, I may be able to turn out an acceptable batch... maybe
